Phillipp,
This was done before my time here, but I can guess how this was done:
1) convert roi to mask
2) convert mask to surface
3) render the surface

In case of the hippocampus, we are following the guidelines developed and published by your lab (Pantel et al.). I have a question concerning illustrational purposes: in the aforementioned paper there is a very nice figure showing the 3d-shape of both hippocampi (Hip_as_desired.jpg attached). Has this 3d-model also been created by BRAINS2? And if so how? Because such a model of course looks much nicer than what is automatically created in the surface viewer when you have traced the ROIs (Hip_Surface_Viewer.jpg attached).
