BrainSuite
i recently learned that the MNE and BrainStorm packages make use of
surfaces created by the BrainSuite application, and subsequently
discovered that BrainSuite does not support the Gifti format (as
far as I am aware). Does anybody know why this is the case? Should
the BrainSuite developers be convinced of the wonders of Gifti?

Completely agree with that.
I'm having a hard time using it outside BrainSuite.

I just found this post today -- we plan to add GIFTI support. For now, if you need to work with BrainSuite files outside of our tools, you might want to look at this page:
